Healthy Recipes for Kids Healthy Snacks for Kids
Every parent needs a repertoire of healthy recipes for kids. Since the food they eat directly impacts their health and immunity, raising your kids to eat healthy is your duty as a parent, in my opinion. I know it's the hard way. I've done it. I also know the whining is annoying, it gets tiring fighting them over it, and sometimes you're not in the mood.I get it. But with the rising costs of "health care" the single biggest thing you can do to protect your child's future financial and physical health is teach them to eat healthy. So here are some of my favorite fun healthy kids snacks and healthy recipes for kids.
Ants on a log Celery stalks filled with peanut butter or almond butter with raisins or dried cranberries. You can also fill the celery with cream cheese if peanuts are an issue. For a sweet treat, use chocolate or carob chips, or even yogurt covered raisins. Sunflower seeds would also work well here. Hummus, carrot sticks, and whole wheat crackers Hummus is a dip made from garbanzo beans and tahini (sesame paste) and my kids love it. Carrot sticks, celery, whole wheat crackers and pita chips are all good to dip in it. Toasted garbanzo beans For a crunchy, nut-like snack, rinse a can of garbanzo beans and toss them in a couple tablespoons of extra virgin olive oil. Add a touch of sea salt, put them on a cookie sheet in a single layer, and then put them in a 250 degree oven and bake them, tossing the pan occasionally, until they are dried and crunchy. These are yummy! Apples and peanut butter or almond butter Apple slices with peanut or almond butter to dip in. Mmmmmm. Apple slices and cheddar cheese Like a wine and cheese party. Just serve with kid friendly drinks. ;) (Mommy can have a glass of wine, though). Fruit smoothies I'll give you the ratios and then you can change up the original items with what you have and what your child likes. I take 4 ounces of frozen fruit (strawberries, blueberries, peaches, nectarines, mangoes, mixed berries, pineapple, cherries) and add them to a blender with one ripe banana. Then I add 1/2 cup of vanilla soy milk or vanilla rice milk and 1/2 cup of acai berry juice, Bom-Dia blueberry/acai juice, or cranberry juice and blend until smooth. This recipe feeds both my kids for a snack, or as part of a breakfast. Fresh fruit and veggies and string cheese The rule in my house is if you don't have to unwrap it you can eat it anytime. So obviously fresh fruit and veggies like carrot sticks and celery sticks are always OK. To round it out as a snack, I'll add a piece of part skim mozzarella string cheese. Frozen, chocolate covered bananas Trader Joe's has these, and we all LOVE them. You can also make your own. Take ripe bananas, peel them, and put popsicle sticks into one end of each banana and push it about halfway up the banana. Lay the bananas on a wax paper lined cookie sheet and freeze for about 2 hours. When you're ready to dip them, melt chocolate chips in a double boiler or in a microwave. You can either brush the chocolate on with a pastry brush, or dip them in a tall cup. Work quickly, because the chocolate will harden fast on the frozen banana. Lay the chocolate banana back on the cookie sheet and freeze for about another half hour. Popcorn By popcorn I mean popcorn you pop yourself, in a pan with a little oil or in an air popper. Popcorn in a bag doesn't count. Top it with sea salt or parmesan cheese. Chips and salsa This is especially good if you pick organic, stone ground corn tortilla chips.
